Baby Vegetables
If you’re looking for something “cute” and novel to add to your crop production list, baby vegetables might be for you. Smaller versions of full-sized products, baby veg are usually either standard cultivars harvested at an immature stage, genetically developed cultivars that are smaller at maturity or secondary harvests. These minis can add diversity to a CSA or farmers market booth and have a lot of potential with gourmet restaurants.
